In the running for my favourite cocktail of all time, I give you the Petruchio!


  • 2 shots gin
  • 2 shots Aperol
  • 1 shot sugar syrup*
  • 1 shot lemon juice
  • 1 egg white
  • Ice
  • Dash Bitters

Or if you’re weighing it out:

  • 90g gin
  • 90g aperol
  • 45g sugar syrup*
  • 45g lemon
  • 1 egg white
  • Ice
  • Dash Bitters

Makes 2 drinks


*Sugar syrup: If you don’t have sugar syrup in the fridge, you can make it super easy! Pour 250ml boiling water over 1 cup of sugar and stir until sugar is dissolved. Pop in the fridge or freezer until cold. I recommend doing this overnight, and do a double batch so you always have it in the fridge.

  1. Combine all ingredients in a cocktail shaker, or a glass jar with the lid tightened.
  2. Shake it hard for 45 seconds.
  3. Strain into a glass.
  4. Add 3 drops of bitters and stir through the top.
