Banana Bread Bars with Cream Cheese Frosting

Ingredients

Ingredients - Cakes

  • 170g light brown sugar
  • 230g self raising flour
  • 30g Dutch cocoa powder
  • Ā½ tsp salt
  • 130g melted butter, cooled
  • 1 tsp vanilla bean paste
  • 2 eggs
  • 300g mashed overripe banana (about 3 bananas)

Ingredients - Cream Cheese Buttercream

  • 50g unsalted butter, room temperature
  • 250g cream cheese, room temperature
  • Ā½ tsp vanilla bean paste
  • 300g icing sugar

Method

  1. Preheat oven to 160Ā°c fan-forced.
  2. Whisk together dry ingredients in a bowl.
  3. In another bowl, combine wet ingredients.
  4. On low speed in a stand mixer, or with a spatula, gently combine wet ingredients and dry ingredients.
  5. Pour into a lined baking tray, (approx 22x30cm), smooth the surface and bake for 30-35 minutes, until the centre bounces back slightly when touched and/or a knife comes out clean.
  6. For the buttercream, using a stand mixer or electric beater, beat butter, cream cheese and vanilla extract until smooth and light (~2 mins on high).
  7. Add icing sugar on low speed to combine, then turn up to high and beat until soft and smooth.
  8. Spread over cooled banana bars then cut into squares or rectangles and serve.
