Banana Bread Bars with Cream Cheese Frosting

Ingredients
Ingredients - Cakes
- 170g light brown sugar
- 230g self raising flour
- 30g Dutch cocoa powder
- Ā½ tsp salt
- 130g melted butter, cooled
- 1 tsp vanilla bean paste
- 2 eggs
- 300g mashed overripe banana (about 3 bananas)
Ingredients - Cream Cheese Buttercream
- 50g unsalted butter, room temperature
- 250g cream cheese, room temperature
- Ā½ tsp vanilla bean paste
- 300g icing sugar
Method
- Preheat oven to 160Ā°c fan-forced.
- Whisk together dry ingredients in a bowl.
- In another bowl, combine wet ingredients.
- On low speed in a stand mixer, or with a spatula, gently combine wet ingredients and dry ingredients.
- Pour into a lined baking tray, (approx 22x30cm), smooth the surface and bake for 30-35 minutes, until the centre bounces back slightly when touched and/or a knife comes out clean.
- For the buttercream, using a stand mixer or electric beater, beat butter, cream cheese and vanilla extract until smooth and light (~2 mins on high).
- Add icing sugar on low speed to combine, then turn up to high and beat until soft and smooth.
- Spread over cooled banana bars then cut into squares or rectangles and serve.
