Macadamia Blondies
Brown butter, macadamia and honey blondies in partnership with David Jones are chewy, nutty and divine. They come together easily and in no time, a recipe you’ll want to repeat over and again.
Ingredients
- 220g salted butter (I like Lightly Salted Lurpak), plus more for greasing the baking tin
- 230g light brown sugar
- 50g macadamia honey or plain honey
- 1 tsp vanilla extract
- 2 eggs
- 225g plain flour
- 1 ½ tsp bicarb soda
- 180g white chocolate, roughly chopped (I like the Nestle Plaistowe Baking Cocolate)
- 150g macadamia nuts
Method
- Preheat the oven to 150°C.
- In a saucepan brown butter, then pour immediately into a heatproof bowl and allow to cool until warm.
- Whisk sugar, honey, vanilla essence, eggs and butter in a large bowl.
- In another bowl, whisk to combine flour and bicarb soda.
- Add flour mixture to egg mixture and gently fold through until just combined (you can use a stand mixer if you have one to speed this up).
- Fold through white chocolate chunks and macadamias.
- Pour into a lined baking tin and smooth the top with a spatula.
- Evenly sprinkle over some salt flakes.
- Bake for 30-40 mins, until a knife comes out clean.
- Allow to cool completely in the tin, then cut into 15-18 pieces.
