Buttermilk & Peach Salad
This is a go-to, heavily requested summer salad in our household! I particularly like making the dressing and dipping the fresh peach and cos pieces in to make sure it’s aight (it always is). I make this all year, and when peaches are out of season I just leave them out. It’s a really nice simple salad with just cos lettuce.

Ingredients

For the dressing:

  • 40g buttermilk
  • 70g creme fraiche
  • 10g extra virgin olive oil
  • 10ml lemon juice
  • 10ml white balsamic vinegar (or omit if you don’t have)

For the salad:

  • 3 heads cos lettuce, washed and chopped
  • 1-2 ripe peaches (optional), cut in wedges (immediately before serving, or they will oxidise and go brown)
  • 1 punnet dill, leaves picked

Method

  1. In a bowl, whisk together dressing ingredients. Season to taste with salt flakes.
  2. If you are serving immediately, you can add the remaining ingredients to bowl (make it a large one if that’s the case) and toss gently to combine (I reserve half of the peach to aesthetically place on top). Otherwise, store the salad dressing in a container until ready to toss/serve.
