Savoury Toast
Savoury toast has to be one of my favourite discoveries of 2024. The possibilities are absolutely endless, but a plate of this custardy yet crunchy toast topped in smooth ricotta and truffle honey might just be my new death row meal.


For the egg wash:

  • 1 large egg
  • 50ml full cream milk
  • ⅛ tsp nutmeg
  • 20g Parmesan, finely grated
  • 3 sprigs thyme, leaves picked

For the rest:

  • 2 slices Bakers Delight Sourdough Vienna
  • 20g butter

Optional, to serve:

  • Butter, chives, salt flakes and black pepper
  • Raw sliced or grilled radish with avocado, extra virgin olive oil, salt flakes and black pepper
  • Ricotta and truffle or chilli honey
  • Extra virgin olive oil roasted cherry tomatoes, basil, salt flakes and black pepper or chilli flakes


  1. Add all egg wash ingredients and a good pinch of salt flakes to a shallow dish that will allow you to evenly dip both pieces of bread, laying flat.
  2. Soak both pieces of bread at a time, approx 2 mins each per side.
  3. Meanwhile, melt butter over medium heat in a pan that will accommodate both pieces of bread at once.
  4. Fry each side for about 2 minutes, until golden brown, and serve with your choice of toppings.
