Beef Bibimbap
Bibimbap is one of my absolute favourites! Highly underrated. In 2017 when I worked at Uber Eats, I was seriously considering opening my own bibimbap joint, called Bibs. But it didn't happen, so here's the recipe. This is insanely delicious; all the ingredients can be bought at both major supermarkets; it's healthy and makes for great leftovers (if there are any). Ingredients
Bulgogi beef marinade:
- 400g beef eye fillet steak, thinly sliced
- ⅓ green apple, grated
- 3 garlic cloves, minced
- ¼ cup light soy sauce
- 1 tbsp brown sugar
- 1 tbsp toasted sesame oil (Ayam Pure Black Sesame Oil)
Gochujang sauce:
- 3 tbsp gochujang paste (available at Coles)
- 1 tbsp toasted sesame oil
- 1 tbsp light soy sauce
- 2 tbsp mirin
- 1 tsp white rice vinegar
- 1 tbsp sugar
- 1 garlic clove, minced
For the rest:
- 2 cups short-grain or brown rice, rinsed
- Vegetable oil, for frying
- 100g bean sprouts, washed
- 2 carrots, cut into matchsticks
- 2 zucchini, cut into matchsticks
- 1 bunch broccolini, cut into small pieces
- 2 cobs corn, kernels removed
- 4 eggs
- 50g crushed peanuts, to serve
- Kimchi, to serve
Method
- Combine bulgogi ingredients, stirring until sugar dissolves, then add beef and marinate for at least 30 minutes, or overnight.
- Combine all ingredients for the gochujang sauce in a bowl, stirring until sugar dissolves, and set aside.
- Prep your vegetables.
- Put your rice on in a pot or rice cooker, so it’s ready to serve with everything else.
- Steam or boil broccolini, strain and season with salt.
- In a large pan, add 1 tbsp of vegetable oil on medium heat and lightly sauté the vegetables in batches, seasoning each with salt as you go.
- For the beef, heat another 1 tbsp oil in the frying pan over high heat. Add the beef and cook for 1–2 minutes until caramelised and cooked through.
- Lastly, heat 2 tbsp vegetable oil and fry eggs. When they are nearly done, you can add a lid to help steam the top side.
- To serve, spoon rice into bowls, top with vegetables, kimchi, beef and fried eggs. Top with goghujang sauce and toasted sesame seeds.
