Lazy Girls Broccolini Rosé Pasta

This lazy girls pasta is a mashup of my two most viral recipes, broccolini goats cheese pasta AND my pancetta and mushroom rosé. I, creature of habit, have been eating this literally any opportunity I get. This is a dinner for one because my husband is often not home for dinner or doesn’t want to eat pasta every night? No dicing onions involved, it’s just so good and easy. Also it’s full of greens so I consider it a nourishing dinner, and the sauce will be ready in the 10 minutes it takes to cook your pasta.

Ingredients

Ingredients - Serves 1:

  • 30g butter
  • 1 shallot, finely sliced
  • 1 garlic clove, finely sliced
  • ¼ tsp chilli flakes
  • 25g tomato paste
  • 100g thickened cream
  • 100g dried pasta
  • 1 bunch broccolini (150-180g), cut into 2-3cm lengths 
  • 10 fresh basil leaves
  • Grated Parmesan, to serve

Ingredients - Serves 2:

  • 60g butter
  • 2 shallots, finely sliced
  • 2 garlic cloves, finely sliced
  • ½ tsp chilli flakes
  • 50g tomato paste
  • 200g thickened cream
  • 200g dried pasta
  • 2 bunches broccolini (300-350g), cut into 2-3cm lengths 
  • 20 fresh basil leaves
  • Grated Parmesan, to serve

Method

  1. Cook pasta until al dente in a pot of salted, boiling water. Set a timer for two minutes before it will be cooked to add your broccolini.
  2. Melt butter in a fry pan and cook in shallot, garlic and chilli flakes (with a big pinch of salt) and saute until tender.
  3. Add tomato paste and cook, stirring, until colour has deepened (about 2 mins)
  4. Add cream, stir until combined and bring to a simmer.
  5. In the last two minutes of cooking the pasta, add in broccolini. Reserve ½ cup of pasta water.
  6. Strain pasta and broccolini, add to the sauce with basil and stir until combined.
  7. Loosen up the sauce with some reserved pasta water if needed.
  8. Taste and season, and serve with Parmesan.
