Simple Salad

Simple, simple salad! This is weirdly my most asked about dish (side) when I have friends or family over. The secret: young butter lettuce (they sell it washed in bags at Woolies, highly convenient), good quality balsamic* from Modena with DOP - Designation of Origin Protection, and a great extra virgin olive oil (such as Golden Groves). And salt flakes of course. As usual, good quality ingredients do all the work for you. My recipe for my everyday (literally almost every day) salad is below…

*Quality is so important with a good balsamic. I recommend only buying a product that has come from Modena, Italy, and has 8 years of age or more. This is my go-to. 

 

Ingredients

  • 170g butter lettuce leaves
  • 20g extra virgin olive oil
  • 17g aged balsamic (at least 8 years. I like the Leonardi one, which you can get from most Italian specialty stores - Bottega Rotolo, Frewville/Pasadena Foodland and Mercato in Adelaide)
  • Pinch of salt flakes

Method

  1. Drizzle balsamic and olive oil over butter lettuce in a bowl immediately before serving, toss and season to taste with flaky salt.
