Egg Drop Soup
Chinese egg drop soup is the perfect lazy girls soup, it's ready in 10 minutes I kid you not, and I swear it does something to your soul.
Ingredients
- 1L chicken stock
- 1½ tbsp corn flour
- ½ tsp white pepper
- 1 tbsp toasted sesame oil
- 1 tbsp light soy sauce
- 5 spring onions, thinly sliced
- 3 eggs, lightly beaten
Serves 2-4, you could add some wontons and/or noodles to bulk it up!
Method
- Bring chicken stock to a gentle simmer.
- In a small bowl, stir together corn flour and 1 tbsp water to make a slurry, then add it to the chicken stock and stir to combine.
- Add white pepper, toasted sesame oil, light soy sauce and spring onions.
- Lightly beat up eggs and drizzle them into the simmering soup, stir gently, taste and season and serve immediately.
