Egg Drop Soup
Chinese egg drop soup is the perfect lazy girls soup, it's ready in 10 minutes I kid you not, and I swear it does something to your soul.


  • 1L chicken stock
  • 1½ tbsp corn flour
  • ½ tsp white pepper
  • 1 tbsp toasted sesame oil
  • 1 tbsp light soy sauce
  • 5 spring onions, thinly sliced
  • 3 eggs, lightly beaten

Serves 2-4, you could add some wontons and/or noodles to bulk it up!


  1. Bring chicken stock to a gentle simmer.
  2. In a small bowl, stir together corn flour and 1 tbsp water to make a slurry, then add it to the chicken stock and stir to combine.
  3. Add white pepper, toasted sesame oil, light soy sauce and spring onions.
  4. Lightly beat up eggs and drizzle them into the simmering soup, stir gently, taste and season and serve immediately.
